Mexican Casserole
1 pkg. Soy crumbles
1 medium onion minced
3 Tbsp Olive or Canola Oil
1 pkg. Taco seasoning mix
¼ Cup Water
1 pkg whole wheat soft tortilla shells
2 cans chili hot beans
1 pkg. Grated soy cheese
Brown minced onion in olive or canola oil
Add soy crumbles and brown together
Add taco seasoning mix and water
Stir and let sit over low heat for approx. 10 minutes
Spray round casserole dish with nonstick spray
Layer whole wheat tortilla, soy mixture, chili hot beans and soy cheese
Start over and continue layering until you are out of ingredients
End with soy cheese on top
Bake at 350 degrees for approx. 30 minutes or until cheese is melted and the casserole is warm all of the way through
