Black Bean Soup

In large kettle sauté in olive oil:
1 medium finely chopped onion
1 stalk celery chopped
1 carrot chopped

add to vegetables:
4 cups cooked black beans (cooked from scratch or canned organic)
4 cups chicken broth
˝ teaspoon oregano
˝ teaspoon garlic powder
salt and pepper to taste

simmer covered for at least one hour
